VSO

http://www.vso.org.uk/
(Based in the UK, takes volunteers from anywhere, has a six-month "programme" for people 18 - 25) I knew VSO's when I was in the Peace Corps 30 years ago. They are a solid, well-known organization.
References :
You could go lots of places to learn spanish. I would check out a local church and see if they are sending any mission teams to Latin America. Some teams only go for two weeks and some go longer. Also you could check out the local red cross. Some medical teams need helpers in foreign country's.
References :
What you should is pack a shiv and head "abroad" to TIJUANA.
Or you could also run drugs for a living*
