The holiday's worth having for sure but I don't think it's a brilliant idea to go and learn Spanish once you are there. The course could only help you if you have already started to learn the language and then go there to build upon it!

But starting to learn from scratch once you are there won't take you any far away and it would already be time to return before you could start picking up simply words.

So, enrol in some Spanish course as from now itself.
References :
My wife's doing one in the evenings at a local school. Perhaps the same might be good for you too - then go for what sounds like a nice holiday in Santiago and you'll be able to understand more of what's being said. Frankly, I don't think that you'll learn much of the language there and feel that it could well be a ploy to sell holidays.
I'd give it a miss. Go local then have a holiday.
Good luck.
References :
A friend of mine move to Chile. Excellent place to go, and a great way to learn Spanish. Learn the basics before you go, of course (hi, Bye, Bathroom, etc.)
References :
Chile! Wonderful choice.

I'm only in 8th grade but this year for Spanish class (which I've been taking for 2 years, ole!) we had to research a Spanish-speaking country, and I picked Chile.

Let me tell you, it is an amazing country! You are right when you say that it is a country that is a lot more stable and safe than others. The locals are known to be very hospitable and the crime rate down there is very low. It's a very nice country that's a bit on the quiet side. One of Chile's biggest attractions is Easter Island, home to the mysterious volcanic rock heads! There are also some very interesting national parks and reserves you can visit there that offer cool views of wildlife, active (and nonactive) volcanoes, and geysers and such. Many cool things to do if you have time for a little side-trip. As far as your language course, Chile is certainly a good place to go! I recommend it very much so and give this Chile Trip a big thumbs up!
References :
Research from Spanish Class.

Sounds great.
I might be being totally stupid and ignorant, but maybe in Chile they might speak an unusual/different dialect of Spanish? So perhaps it would be better to go to Spain to learn regular Spanish... unless of course you want to learn Chilean-Spanish! Sorry I might be being really stupid here, just a though!!! ;-)
References :
Definitely do it!!!! The best way to learn another language is to immerse yourself in a place where they speak it. Also you'll get to know the culture better and gain an awesome experience. Do it!!
